Egg, Bacon And Leek Galette - cooking recipe

Ingredients
    2 1/2 tbsp butter
    1 tbsp olive oil
    1 None leek, trimmed, sliced
    6 slices bacon, chopped
    1 sheet frozen pie dough, thawed
    1 None large tomato, sliced
    1 oz grated Cheddar cheese
    4 None large eggs
    None None chopped fresh parsley, to serve
    None None salad, to serve
Preparation
    Preheat oven 350\u00b0F. Line a baking tray with parchment paper.
    In a large frying pan, melt butter and oil over high heat. Saute leek for 1-2 mins, until tender. Add bacon and cook for 2-3 mins, until starting to brown. Set aside.
    Place pie dough on prepared baking tray. Trim into a round disc. Top with sliced tomato and cheese, leaving a 1 inch border. Spread leek mixture over top. Fold up edges, pleating, to enclose filling.
    Break eggs carefully on top of filling. Bake for 20-25 mins, until egg is set. Sprinkle with parsley. Serve with salad.
