Chorizo, Chickpea And Chili Stew - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None red onion, sliced
    1 clove garlic, crushed
    2 None red chilies, sliced
    2 None chorizo sausages (about 9 oz), sliced
    2 None potatoes, peeled, cubed
    2 None carrots, sliced
    1/2 tsp chilli flakes
    1/4 cup tomato paste
    2 x 14 oz cans chickpeas, rinsed, drained
    2 cups vegetable stock
    1 x 14 oz can crushed tomatoes
    None None Cilantro, to garnish
Preparation
    Heat oil in a large frying pan on high.
    Saute onion, garlic and chili 1-2 mins, until tender and fragrant.
    Add chorizo, potatoes and carrots; saute 1-2 mins, until chorizo begins to brown. Add chili flakes and cook, stirring, 1 min.
    Stir in tomato paste. Add chickpeas, stock and tomatoes; season to taste.
    Bring to a boil. Reduce heat to low; simmer, covered, 25-30 mins.
    Serve with freshly picked cilantro leaves.
