Beet Tzatziki - cooking recipe

Ingredients
    1 lb beet
    1 1/4 cups yogurt
    3.5 oz ricotta cheese
    2 cloves garlic, minced
    2 tbsp lemon juice
    1/4 cup finely chopped fresh chives
    1/3 cup finely chopped fresh mint leaves
Preparation
    Preheat oven to 350\u00b0F. Wrap beet in foil and roast for 1 hour, or until tender. Let cool then peel and coarsely chop.
    Transfer chopped beet to a food processor along with yogurt, ricotta, garlic and lemon juice. Pulse until combined. Transfer to a serving bowl and fold in herbs.
