Vegetable Rösti With Smoked Salmon And Soured Cream - cooking recipe

1/2 None small sweet potato, peeled, grated coarsely
2 None shallots, peeled, finely sliced
2 oz Swiss chard, trimmed, leaves shredded
1 None small zucchini, coarsely grated
1 None large egg, lightly beaten
1/3 cup spelt flour
1 tbsp olive oil
4 oz smoked salmon
1/2 tbsp sour cream
1 tbsp fresh dill sprigs
Preparation

Combine sweet potato, shallots, chard, zucchini, egg and flour in a large bowl. Divide into 4 equal portions.
Heat oil in a large nonstick frying pan over medium heat. Cook rosti for 4 mins per side, flattening slightly, or until golden brown and cooked through.
Serve rosti topped with smoked salmon, sour cream and dill.
