Crispy Fish Pot Pies - cooking recipe

Ingredients
    2 1/2 tbsp butter
    1 tbsp olive oil
    1 None leek, finely sliced
    1 tbsp all-purpose flour
    3/4 cup heavy cream
    1/4 cup white wine
    1 1/2 lb frozen mixed fish
    1 None lemon, zested and juiced
    1 pinch saffron
    1 None small sweet potato, peeled, cubed, cooked
    2 tbsp fresh dill, chopped
    None None Topping
    2 oz potato chips, lightly crushed
    2 oz aged cheese, grated
    2/3 cup dried breadcrumbs
    None None mixed greens, to serve
Preparation
    Preheat oven to 400\u00b0F. Lightly grease 6 - 4.5 oz ramekins. Place on a baking tray.
    In a frying pan, heat butter and oil over high heat. Saute leek for 4-5 mins, until tender. Add flour and cook, stirring, for 1 min. Whisk in cream and wine until smooth then cook, stirring, until mixture boils and thickens. Reduce heat and add fish, lemon and saffron. Simmer for 4-5 mins, until seafood is cooked through. Add sweet potato and dill. Distribute between ramekins.
    Meanwhile, to make the topping, combine potato chips, cheese and breadcrumbs. Sprinkle over seafood and bake for 15-20 mins, until golden and bubbling.
    Serve with mixed greens.
