Chocolate, Banana And Macadamia Muffins - cooking recipe

Ingredients
    2 1/2 cups self-rising flour
    1/2 cup all-purpose flour
    1/2 tsp baking soda
    3/4 cup brown sugar
    1 cup buttermilk
    2 None medium bananas, mashed
    2 None large eggs, lightly beaten
    2/3 cup vegetable oil
    5 oz macadamias, toasted, chopped
    3 oz semi-sweet chocolate, grated
Preparation
    Preheat oven to 350\u00b0F. Line a 12-hole muffin pan with paper liners.
    Sift flours and baking soda into a large bowl. Stir in sugar.
    In a large bowl, whisk together buttermilk, banana, egg and oil. Fold into dry ingredients and stir in macadamias and chocolate. Do not over mix.
    Spoon into paper liners until each is 2/3 full. Bake for 20-25 minutes until a skewer inserted in the center comes out clean. Allow to cool, then store in an airtight container.
