Madeira Loaf Cakes - cooking recipe

Ingredients
    1/2 cup self-rising flour
    1 1/4 cup ground almonds
    3/4 cup granulated sugar
    1 tsp baking powder
    1 3/4 cup unsalted butter, softened
    3 None eggs, lightly beaten
    1 None lemon, zested
    1/3 cup milk
    1 tsp vanilla extract
    3 oz raisins
    1/3 cup apricot jam, warmed and strained
Preparation
    Preheat oven to 350\u00b0F. Lightly grease 8 mini loaf pans. Line bases and long sides with parchment paper, extending 2/3 inch above edges.
    In a food processor, combine all ingredients except raisins and jam. Pulse until just combined. Add raisins then distribute batter between loaf pans and bake for 15-20 mins, until a skewer inserted in the center comes out clean. Let cool in pans for 10 mins then transfer to a wire rack. Brush warm cakes with jam.
