Grilled Chili Squid Salad - cooking recipe
Ingredients

2 1/4 lb whole baby squid, cleaned, scored
1/4 cup extra virgin olive oil + extra for drizzling
2 tsp sea salt flakes
4 None red chilies, deseeded, finely chopped
2 cloves garlic, finely chopped
2 tbsp fresh oregano leaves, finely chopped
1 lb small tomatoes, halved
2 tbsp fresh mint leaves
2 tbsp fresh flat-leaf parsley leaves
3.5 oz baby spinach
1 tbsp lemon juice
Preparation

Combine squid, oil, salt, chilies, garlic and oregano. Cover and chill for up to 1 hour.
Working in batches, cook squid on a heated, oiled grill plate (or grill) for about 5 mins, or until just tender.
Arrange tomatoes, mint, parsley, spinach and squid on serving plates. Drizzle with lemon juice and extra oil.
