Chicken Fried Rice With Pineapple - cooking recipe

Ingredients
    25 g fresh ginger, peeled and grated
    400 g chicken fillets, cut into strips
    1 None lime, juiced
    2 tbsp soy sauce
    200 g basmati rice
    1 stalk lemongrass, soft inner leaves chopped finely
    1 None chilli pepper, seeded, halved and chopped
    1 clove garlic, peeled and diced
    3 tbsp sesame oil
    1 None pineapple, peeled and cut into pieces (keep 4 slices for garnish)
    1/2 bunch coriander, chopped (some set aside for garnish)
    3 stalks mint, chopped (some set aside for garnish)
    60 g unsalted macadamia nuts
    2 tbsp soy oil and fish sauce to taste
Preparation
    Mix chicken with ginger, lime juice and soy sauce. Cover and chill for at least 1 hour.
    Cook rice in boiling salted water according to package directions. Drain and set aside.
    Heat oil in a pan and saute the reserved 4 slices of pineapple briefly on both sides, then remove and set aside. Add chicken and saute. Remove from heat and set aside. Add cooked rice and stir-fry. Add pineapple chunks and stir-fry for 2-3 mins. Mix lemongrass, chili, garlic and sesame oil then add to pan. Add herbs and saute briefly. Add chicken and season with fish sauce to taste. Serve sprinkled with nuts and garnished with herbs and pineapple slices.
