Poached Chicken And Spicy Melon Salad - cooking recipe

Ingredients
    4 slices ginger, peeled
    3 None star anise
    2 None green onions, 1 cut into 1-inch slices, 1 finely chopped
    2 tbsp soy sauce
    3 None boneless skinless chicken breasts
    2 tbsp olive oil
    2 tbsp lime juice
    1 tsp sugar
    2 oz baby spinach
    1 cup shelled peas, blanched
    1 cup loosely packed cilantro leaves
    1/4 None cantaloupe, peeled and cubed
    1 None chili pepper, seeded and finely chopped
Preparation
    Place 4 cups water, ginger, star anise, sliced green onion and soy sauce in a large saucepan on medium heat. Bring to a simmer. Add the chicken and reduce the heat to low. Simmer, covered, for 10 mins, until cooked through. Allow to cool in the cooking stock.
    For the dressing, whisk oil, lime juice and sugar in a small bowl.
    Place spinach, peas and 3/4 of the cilantro in a bowl. Add the dressing and toss to coat. Toss the melon, chili pepper, remaining cilantro and chopped green onion in a medium bowl. Remove the chicken from the stock and slice. Serve the spinach mixture with the chicken and spicy melon.
