Rich Beef And Smoked Sausage Goulash - cooking recipe

Ingredients
    4 tbsp sunflower oil
    4 None dry-cured smoked sausages
    1.75 kg stewing beef
    400 g onions, diced
    400 g button mushrooms
    3 tsp dried oregano
    3 tbsp tomato puree
    3 tbsp plain flour
    2 x 400 g cans chopped tomatoes
    3 None mixed peppers, deseeded and sliced
    1 None beef stock cube, crumbled
    1-2 tbsp paprika
    4 tbsp chopped fresh parsley
    None None Crusty bread, to serve
Preparation
    Preheat the oven to 325\u00b0F. Heat 2 tbsp oil in a Dutch oven and sear beef in batches for 3-4 mins.
    Add the onions, mushrooms, oregano and seared meat to the pan and saute for 2-3 mins. Stir in the tomato puree and flour and saute for 1-2 mins. Gradually stir in 4 1/4 cups water. Add the tomatoes and peppers, then stir in the bouillon cube and paprika. Cover and place in the oven for 2 hours.
    Heat 2 tbsp oil in a frying pan and fry sausages for 2-3 mins, stirring. Add the sausage to the soup and season to taste, adding more paprika if desired. Sprinkle the soup with parsley and serve with crusty bread.
