Turkey And Sauerkraut Stew With Red Peppers - cooking recipe

Ingredients
    1 1/2 lbs turkey breast cutlets, cut into 1 inch cubes
    1 None small onion, peeled, halved and cut into thin strips
    1 None large red bell pepper, seeded and diced
    1 1/4 cups sauerkraut, drained and rinsed
    1 tsp tomato paste
    1/2 tsp all purpose flour
    1 cup vegetable stock
    6-8 stems thyme, 3 chopped
    3 tbsp oil
    1/4 cup heavy cream
    1 lb fresh gnocchi
    2 None scallions, diagonally sliced
Preparation
    Heat 1 tbsp of oil in a large skillet and cook the turkey for 4 mins, stirring occasionally. Add the onions and peppers cook them for 4 mins more. Season to taste and add the sauerkraut. Mix it in well and stir in the tomato paste and the flour. Cook briefly and then pour in the stock. Bring to a boil. Cover and simmer for 5 mins.
    Heat 2 tbsp of oil in a skillet and saute the gnocchi for 5 mins until golden, turning as necessary. Remove from the skillet and keep warm. Stir the cream and chopped thyme into the turkey mixture and bring it to a boil. Stir in the scallions and serve the stew alongside the gnocchi, garnished with thyme stems.
