Lamb And Apricot Burgers - cooking recipe

Ingredients
    7 oz no-need-to-soak dried apricots
    1 lb lean ground lamb
    2 cloves garlic, peeled and crushed
    2 tbsp coriander seeds, roughly crushed
    2 tbsp olive oil
    None None baked potatoes and salad to serve (optional)
Preparation
    Chop 4oz of the apricots. Place the ground lamb, garlic, chopped apricots and coriander seeds in a large bowl and season well with salt and freshly ground black pepper. Mix together thoroughly then divide the mixture into six.
    With a little flour on your hands, shape the mixture into burgers and place on a plate. Chill for 10-15 minutes.
    Heat the oil in a large, heavy-based frying pan. Add the burgers, in batches if necessary and cook for 4 minutes each side, until browned and cooked through.
    Add the remaining apricots to the pan for the final 2 minutes of the burgers cooking time turn the apricots over a few times during cooking. Drain the burgers and apricots on paper towels and serve immediately with baked potatoes and salad, if desired.
