Roast Duck Legs With Star Anise And Potato Rösti - cooking recipe

Ingredients
    None None ROSTI
    12 oz potatoes, peeled
    1 bunch green onions, sliced
    None None DUCK
    8 tbsp orange marmalade
    1 inch fresh ginger, peeled, grated
    4 None star anise
    1 tsp five-spice powder
    2 tbsp olive oil
    4 None duck legs
    3 1/2 tbsp butter
    None None mixed greens, to serve
Preparation
    Preheat oven to 400\u00b0F.
    For the rosti, cook potatoes in salted boiling water for 15 mins. Drain. Let cool then coarsely grate. Add green onions and toss to combine. Season. Shape into 8 patties.
    For the duck legs, combine orange marmalade, ginger, star anise and five-spice powder. Set aside. Heat 1 tbsp oil in a large frying pan. Sear duck legs for 2 mins per side until browned. Transfer to a roasting pan and coat in marmalade mixture. Roast for 25 mins, until cooked through.
    Meanwhile, heat butter and remaining oil in a large frying pan. Cook rosti for 3-5 mins per side, until golden and crisp. Drain on paper towels and keep warm until ready to serve. Arrange on serving plates then place duck legs on top. Spoon any pan juices over top and serve with mixed greens.
