Cheese Fritters With Strawberry Filling - cooking recipe

Ingredients
    3 medium eggs
    100 g caster sugar
    250 g low-fat cottage cheese
    1 tsp vanilla essence
    250 g plain flour
    2 tsp baking powder
    250 g boiled potatoes, cooled and grated
    40 g butter, melted and cooled
    75 g dried cranberries
    1 litre vegetable oil
    100 g strawberry jam
    50 g icing sugar, for dusting
Preparation
    In a large bowl, cream together the eggs and sugar for about 5 minutes. Stir in the cottage cheese, vanilla extract, flour, baking powder, and a pinch of salt and mix briefly. Knead in the grated potatoes, cooled butter, and dried cranberries.
    Heat oil to about 350\u00b0F in a large, deep pan, or Dutch oven. Carefully place teaspoon sized dollops of batter into the hot oil and fry for about 5 minutes, or until golden brown. Remove from the oil and drain on paper towels. Fill a pastry syringe with the jam and inject about 1 tsp into each fritter. Dust with powdered sugar and serve warm.
