Baked Avocados With Bacon And Eggs - cooking recipe

Ingredients
    2 large ripe avocados, halved and stones removed
    2 tsp lemon juice
    4 medium eggs
    1 None red onion, peeled and finely chopped
    1/2 lb tomatoes, finely diced
    1 tsp sugar
    2 tbsp balsamic vinegar
    1/4 tsp Tabasco sauce
    2 tbsp olive oil
    3 oz bacon, finely chopped
Preparation
    Preheat the oven to 375\u00b0F. Slice a thin piece of avocado from the base of each half so that they stand without wobbling. Place on a baking sheet lined with parchment paper and brush the cut surfaces with lemon juice. Season with salt and freshly ground black pepper. Gently break an egg into the hole of each avocado half then bake for 15-20 mins, until the eggs are cooked to your liking and the avocado flesh is tender.
    Meanwhile, to make the salsa, mix the onions and tomatoes in a small bowl with the sugar, vinegar, Tabasco and oil then season to taste.
    Heat a non-stick frying pan and add the bacon pieces. Fry over medium heat until crispy and golden. Sprinkle on the baked avocados and serve with more freshly ground pepper and the salsa.
