Green Curry With Chicken - cooking recipe
Ingredients

3 tbsp oil
14 oz chicken breasts, cut into strips
.75 oz ginger root, peeled and finely diced
2 None onions, peeled and finely diced
1 clove garlic, peeled and finely diced
1-2 None chili peppers, seeded and finely diced
1-2 tbsp green curry paste
1 2/3 cups chicken stock
3/4 cup unsweetened coconut milk
1 bunch scallions, chopped into approx. 1 1/2 inch pieces
1 bunch cilantro, coarsely chopped
2-3 tbsp lime juice
None None Rice, for serving
Preparation

Heat 1 tbsp of oil in a pan and cook the meat, turning, until golden brown all over. Heat 2 tbsp of oil in a wide saucepan and saute the ginger, onion, garlic and chili for 2-3 mins. Stir in the curry paste and saute briefly. Pour in the chicken stock and coconut milk and cook for about 5 mins, seasoning to taste. Add the chicken and scallions to the curry and simmer over low heat for 2-3 mins. Season the curry with lime juice and serve sprinkled with cilantro. Serve with rice on the side.
