Zucchini Fritters - cooking recipe
Ingredients

3 None zucchini, grated
1/2 cup fresh cilantro leaves, chopped, plus additional, to serve
1/2 None onion, grated
2 None green chili peppers, finely chopped
1 tsp baking powder
1/2 cup flour
1 tsp ground cumin
None None Vegetable oil, for deep frying
8 oz cherry tomatoes, halved
1 cup Greek yogurt
None None Naan bread, to serve
Preparation

Combine zucchini, cilantro, onion and chili peppers in a large bowl. Sift in flour, baking powder and cumin. Season to taste and mix well.
Heat oil in a wok or large saucepan on high heat, until a droplet of batter sizzles as soon as it is added. Working in 2 batches of 8, gently drop tablespoons of batter into hot oil and cook, turning, for 4-5 mins each, until golden and crisp. Drain on paper towels. Season to taste.
Serve fritters with tomatoes, yogurt, naan bread and additional cilantro.
