Fried Rice - cooking recipe

Ingredients
    2 cups chicken stock
    1 cup uncooked rice
    2 tbsp vegetable oil
    2 None eggs, beaten
    2 None scallions, chopped, plus extra curls for garnish
    2 cloves garlic, minced
    1/4 cup shredded carrot
    2 tbsp chopped fresh parsley leaves
    2 tbsp soy sauce
Preparation
    Bring chicken stock to a boil. Add rice and bring back to a boil. Reduce heat to low, cover and simmer until rice is tender.
    Heat 1 tbsp olive oil in a large frying pan over medium heat. Add eggs and cook until lightly set. Flip over and cook for another 30 seconds. Remove from pan and slice.
    Add remaining oil to pan. Cook scallions, garlic and carrot for 2 mins, or until carrot wilts. Add rice, parsley and soy sauce. Cook until heated through. Stir in egg. Serve warm, garnished with scallion curls.
