Plum And Cinnamon Cake - cooking recipe
Ingredients

1/2 cup reduced-fat dairy-free spread
1 tsp vanilla extract
1/2 cup brown sugar
3 None eggs, separated
1/2 cup self-rising flour
1/2 cup wholewheat self-rising flour
1 tsp ground cinnamon
4 None whole canned plums in syrup, drained, halved
2 tsp powdered sugar, sifted
Preparation

Preheat oven to 350\u00b0F. Grease an 8 inch cake pan. Line base with parchment paper.
Cream spread, vanilla, brown sugar and egg yolks until light and fluffy. Add flour and cinnamon. Whip egg whites to soft peaks then fold in. Transfer to prepared pan. Arrange plums, cut-side down, on top of batter. Bake for 30 mins, or until a skewer inserted in the center comes out clean. Let cool for 10 mins then turn out onto a wire rack to cool completely.
Dust with powdered sugar.
