Baked Mussels - cooking recipe

Ingredients
    1 lb mussels
    1/4 cup olive oil
    1 clove garlic, crushed
    2 tbsp finely chopped fresh flat-leaf parsley
    1/2 cup stale breadcrumbs
    1 medium tomato, seeded and finely chopped
Preparation
    Scrub the mussels and remove the beards. Heat 3/4 cup water in large saucepan on high heat. Add the mussels and cook, covered, for about 3 mins or until shells the open (discard any that do not). Drain and discard the liquid.
    Loosen the mussels and remove from the shell. Discard one half of each shell and reserve the remaining half. Combine the mussel meat, oil, garlic, parsley and breadcrumbs in a medium bowl and mix well. Cover and refrigerate for 30 mins.
    Preheat the oven to 400\u00b0F.
    Place one mussel in each shell and place on a baking pan. Combine the tomato with the breadcrumb mixture and spoon over the mussels. Bake for about 5 mins or until the breadcrumbs are lightly browned.
