Thai Chicken Fried Rice - cooking recipe

Ingredients
    2 pkg (8 oz each) microwavable 90-second jasmine rice
    1 lb boneless skinless chicken thighs, cut into bite-size pieces
    1 1/2 tbsp red curry paste
    1 1/2 cup frozen peas
    1/2 cup chopped cilantro, plus additional leaves, to serve
    1 tbsp lime juice, plus additional wedges, to serve
    1 tsp fish sauce
Preparation
    Prepare rice according to package directions; keep warm.
    Meanwhile, heat a lightly oiled large nonstick skillet on high heat. Cook chicken for 7 mins, until browned and cooked through. Stir in curry paste; cook for another minute. Stir in peas and rice; cook till heated through.
    Fold in chopped cilantro and drizzle with lime juice and fish sauce. Sprinkle with additional cilantro leaves and serve with lime wedges.
