Date And Butterscotch Pudding - cooking recipe

Ingredients
    1/2 cup self-raising flour
    1 cup brown sugar, firmly packed
    3/4 cup milk
    2.75 oz dried pitted dates, chopped
    2/3 cup butter, 3 tbsp melted, remainder chopped
    None None Powdered sugar, for dusting
    None None Whipped cream, to serve
Preparation
    Preheat oven to 400\u00b0F. Lightly grease an 8 1/2 cup baking dish.
    Combine flour, 1/3 cup brown sugar, milk, dates and melted butter in a medium bowl. Spoon mixture into prepared dish; smooth surface of mixture.
    Whisk 1/2 cup boiling water, remaining brown sugar and butter in a large bowl; stir until smooth. Carefully pour over the back of a spoon onto pudding mixture.
    Bake for 20-25 mins or until golden and firm. Remove pudding from oven. Stand for 2 mins. Dust with powdered sugar. Serve with whipped cream.
