Banana Coconut Fritters - cooking recipe

Ingredients
    3/4 cup flour
    1/2 cup flaked coconut
    1 tbsp granulated sugar
    1 tsp ground cinnamon
    1 None egg, separated
    1/2 None lemon, peel finely grated and lemon juiced
    None None Vegetable oil, for deep frying
    2 None bananas, peeled, sliced diagonally into 3/4 inch pieces
    None None Powdered sugar, to dust
    None None Chocolate sauce and whipped cream, to serve
Preparation
    Sift flour into a large bowl. Stir in coconut, sugar, cinnamon. Make a well in the center of the dry ingredients. Mix 1/3 cup water, egg yolk and lemon peel and juice in a small bowl. Pour into the well and stir until batter is smooth.
    Beat egg white in a clean bowl until soft peaks form. Fold into batter.
    Heat oil in a saucepan on medium heat. Dip banana pieces into batter, draining off excess. Deep-fry in 3 batches for 1-2 mins, until golden. Drain fritters on paper towels.
    Dust with powdered sugar. Drizzle with chocolate sauce and serve with whipped cream, if desired.
