Mini Potato Pizzas - cooking recipe
Ingredients

3 None large desiree potatoes
2 tbsp olive oil
1/4 cup tomato puree
3.5 oz cured spicy sausage
8 oz canned pineapple pieces, drained
3.5 oz mozzarella, grated
Preparation

Preheat oven to 400\u00b0F. Lightly grease 2 baking sheets.
Slice potato into 1/8 inch round slices, discarding end pieces. Place slices on prepared baking sheet. Brush with oil. Bake for 8-10 minutes each side, until tender and golden. Cool slightly.
Spread each with tomato paste. Sprinkle with the spicy sausage, pineapple and cheese.
Bake for 5-6 minutes, until golden. Cool slightly before serving.
