Potato And Vegetable Salad With Herb Dressing - cooking recipe
Ingredients

1 lb small potatoes, peeled and halved
1/2 lb green beans, trimmed and cut into pieces
1 small cauliflower, cut into florets
1 head lettuce, torn into bite-size pieces
1 None red pepper, deseeded and roughly chopped
1 2/3 cups plain yogurt
3 tbsp mayonnaise
2 tsp basil, chopped, plus extra leaves to garnish
2 tsp chives, chopped
2 tsp parsley, chopped
Preparation

Cook the potatoes in salted boiling water for 15-20 mins, until cooked through. Drain, allow to cool, and slice.
Cook the beans and cauliflower florets in salted boiling water for 7-8 mins until just tender. Drain, rinse in cold water and allow to cool completely.
Place the cooled potatoes in a bowl with the beans and cauliflower. Add lettuce and pepper and toss to mix.
For the dressing: place the yogurt and mayonnaise in a bowl, add the chopped herbs, season to taste with and freshly ground black pepper and mix well.
Spoon dressing over the salad, garnish with the extra basil leaves and serve.
