Honey Mustard Pork Ribs - cooking recipe

Ingredients
    1 None beef stock cube
    1 cup boiling water
    1/4 cup honey
    2 tbsp wholegrain mustard
    2 tbsp oil
    2 None onions, cut into wedges
    1 lb pork ribs, cut into 4
    2 None apples, cored, cut into wedges
    1 tbsp white wine vinegar
    1/2 None iceberg lettuce, cut into wedges
Preparation
    Preheat the oven to 350\u00b0F. In a large bowl, dissolve the stock cube in boiling water. Whisk in the honey and mustard.
    Heat half the oil in a large frying pan on medium. Saute onion for 2-3 mins, until golden. Transfer to a baking dish.
    Sear ribs in the same frying pan on high for 2-3 mins on each side. Transfer to the baking dish with the onion. Scatter apple around the pork. Pour over stock mixture and turn to coat. Bake for 40-45 mins, basting occasionally, until the pork is cooked through and the apple is tender.
    In a bowl, whisk together the remaining oil and vinegar. Season to taste. Drizzle over the lettuce wedges. Serve ribs with the wedge salad.
