Ham And Cheese Croquettes - cooking recipe

1/4 cup butter
1/3 cup all-purpose flour
1 cup milk
3 oz mozzarella, grated
3.5 oz ham, chopped
2 None scallions, chopped
2 tbsp parsley, chopped
1/2 cup all-purpose flour, seasoned
2 None medium eggs, lightly beaten
1 2/3 cups breadcrumbs
None None Canola oil, for deep frying
None None Sweet chili sauce, to serve
None None Salad, to serve
Preparation

Melt butter in a medium saucepan over medium heat. Add flour and cook, stirring, for 1 min. Remove from heat and whisk in milk. Return to heat and cook, stirring, until the mixture boils and thickens. Reduce heat to low and simmer for 1 min.
Transfer to a bowl and stir in mozzarella, ham, scallions and parsley. Chill until firm enough to handle.
Shape into 10 oval croquette shapes. Dust in seasoned flour, coat in eggs and dip in breadcrumbs to coat. Chill for 1 hour.
Heat 4 inches of oil in a large saucepan on medium, until a cube of bread sizzles as soon as it is added.
Add 5 croquettes and cook, turning, for 2-3 mins, until golden. Drain on paper towel. Repeat with remaining croquettes. Serve with sweet chili sauce and salad.
