Smashed Potatoes With Parsnips - cooking recipe

Ingredients
    1 lb baby red potatoes, diced
    8 oz parsnips, sliced
    1/4 cup chicken stock
    4 oz fat-free cream cheese
    2 tbsp chopped fresh chives
Preparation
    In a saucepan, cook potatoes and parsnips in boiling salted water for 10 mins, or until fork tender. Drain. Return to pot and mash with chicken stock, cream cheese and chives. Season.
