Spaghetti With Spicy Chicken And Feta - cooking recipe

1 tbsp + 2 tsp vegetable or olive oil
1 lb boneless chicken thighs
1 clove garlic, crushed
1 tsp dried oregano
1 None pinch dried chili flakes
14 oz can chopped tomatoes
2 tbsp tomato puree
1 tbsp red wine vinegar
10 oz spaghetti
1 tbsp chopped fresh flat-leaf parsley
2 oz feta, crumbled
None None salad, to serve
Preparation

For the chicken, heat 1 tbsp oil in a frying pan on high heat. Add chicken and cook, turning, 4 mins, until browned. Transfer to a plate and let rest 5 mins. Slice thickly.
For the sauce, add garlic, oregano and chili flakes to same pan. Cook on medium heat, stirring, 30 seconds, until fragrant. Stir in tomatoes and tomato puree. Simmer, stirring occasionally, 10 mins, or until thickened. Add chicken, juices and vinegar. Cook, stirring occasionally, 5 mins, or until chicken is cooked through. Season to taste.
Meanwhile, cook spaghetti according to package instructions. Drain and return to pan. Add parsley and 2 tsp oil. Toss to combine. Season to taste and divide between serving bowls. Top with sauce and chicken, sprinkle with feta and serve with salad.
