Fish And Potato Pie - cooking recipe
Ingredients

1 tbsp oil
2 large leeks, halved, washed and thinly sliced
2 cloves garlic, crushed
4 tbsp (1/2 stick) butter
2 tbsp flour
2 cups milk
10 oz firm white fish fillets, cubed
10 oz salmon fillets, cubed
2 None green onions, chopped
2 tbsp snipped dill
4 large potatoes, peeled and cooked whole
Preparation

Heat oil in large saucepan on medium heat. Cook leek and garlic for 5 mins, stirring occasionally, until soft but not brown.
Increase heat to high. Add 2 tbsp of the butter and stir until melted. Add flour and cook for 2-3 mins, stirring. Remove pan from heat and stir in milk. Return pan to medium heat and bring to a gentle simmer, stirring constantly. Reduce heat to low; simmer for 5 mins. Stir in fish and simmer for 2 mins.
Remove pan from heat and stir in green onion and dill. Pour into a 2-quart baking dish. Cut potatoes into thin slices and arrange over fish. Melt remaining 2 tbsp butter and brush over potato. Place under a preheated broiler for 8-10 mins, until golden.
