Smoky Eggplant Dip - cooking recipe

Ingredients
    2 None large eggplants
    2 cloves garlic, minced
    1 None lemon, juiced
    1/4 cup extra virgin olive oil
    2 tbsp fresh cilantro leaves, chopped
    None None flatbread, to serve
    None None vegetable crudites, to serve
Preparation
    Cook eggplant directly over a gas flame, turning frequently, for 5-10 mins, until charred and soft. Alternatively, char under broiler or on grill. Cut in 1/2. Let cool then scoop out flesh. Transfer to a food processor and puree until smooth. Add garlic, lemon juice, olive oil and cilantro and process. Season.
    Serve with flatbread and vegetable crudites.
