Fruity Almond Ring - cooking recipe

Ingredients
    2 cups golden raisins
    3/4 cup orange juice
    12 tbsp (1 1/2 sticks) butter, softened
    2 tsp finely grated orange peel
    1/3 cup demerara sugar
    1/3 cup granulated sugar
    3 None eggs
    2/3 cup flour
    1/3 cup self-rising flour
    1 cup whole blanched almonds
    1/3 cup orange marmalade
Preparation
    Combine raisins and orange juice in large bowl. Cover; let stand overnight.
    Preheat the oven to 300\u00b0F. Grease a deep 8-inch ring cake pan; line bottom with parchment paper.
    Beat butter, orange peel and sugars in a large bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating well between additions. (Mixture may curdle at this point but will come together later.)
    Using a wooden spoon, stir in raisin mixture then flours. Spoon into prepared pan; sprinkle evenly with almonds.
    Bake for 1 1/2 hours, or until a skewer inserted into center comes out clean. Cover loosely with foil during baking if it starts to overbrown. Give the cake quarter turns several times during baking if browning unevenly.
    Heat marmalade in small saucepan without boiling; strain. Brush hot cake with hot marmalade. Cool in pan on a wire rack.
