Low Fat New York Cheesecake - cooking recipe

3 oz graham crackers, crushed
4 tbsp low-fat spread, melted
1 lb low-fat cream cheese, at room temperature
2/3 cup evaporated milk
1/3 cup granulated sugar
1 None lemon, zested and juiced
2 None eggs
1/2 lb strawberries, mashed
Preparation

Preheat oven to 300\u00b0F. Lightly grease and line an 8 inch springform pan with foil, leaving a 3/4 inch overhang.
Combine graham cracker crumbs and spread. Press firmly into base of prepared pan. Chill for 30 mins.
Meanwhile, beat cream cheese until smooth. Add evaporated milk, sugar, lemon zest and lemon juice. Beat in eggs, 1 at a time, until combined. Transfer to prepared pan and bake for 50-60 mins, until just set but slightly wobbly in the center. Turn oven off. Let cheesecake cool in oven with door ajar. Chill overnight.
Top with mashed strawberries. Cut into wedges to serve.
