Grilled Sweet And Sour Pork - cooking recipe
Ingredients

4 (4.5 oz) pork tenderloin medallions
1 None medium green pepper, chopped
1 None medium yellow pepper, chopped
2 tbsp vegetable or olive oil
8 oz canned pineapple pieces in natural juice, drained
3/4 cup sweet and sour sauce, warmed
2 None green onions, thinly sliced
1 bunch bok choy
2 tsp sesame oil
15 oz cooked long-grain white rice
Preparation

Heat a large frying pan over medium-high heat. Toss together pork, peppers and oil. Season. Working in batches, saute pork for 4-5 mins, until golden brown and cooked to your liking. Set aside, cover with foil and let rest for 5 mins. Saute peppers for 3-4 mins, until tender. Transfer to a medium bowl.
Saute pineapple for 2-3 mins, until golden brown. Add to peppers along with sweet and sour sauce and green onions.
Meanwhile, cover bok choy with boiling water and stir until just wilted. Drain then toss with sesame oil. Serve with pork, vegetable mixture and rice.
