Ingredients

2 tbsp salted butter
2 cups long-grain rice
1 (14 oz) can coconut milk
1 None lime, zested and juiced, plus extra slices for garnish
1/2 cup sliced scallions
Preparation

In a medium saucepan, melt butter over medium-high heat. Cook rice for 2 mins, stirring constantly. Add coconut milk, 1 cup water and 1 tsp salt. Bring to a boil then reduce heat to medium, cover and cook for 20 mins, or until rice is tender.
Remove rice from heat and stir in 3 tbsp lime juice, 1 tsp lime zest and scallions. Spoon into a serving bowl and garnish with lime slices.
