Feta And Eggplant Bake - cooking recipe

Ingredients
    1 cup long-grain rice
    1 None eggplant, sliced
    4 tbsp olive oil
    14 oz ground beef
    1 None onion, thinly sliced
    1 clove garlic, crushed
    3 stems fresh rosemary, leaves chopped, reserving some for garnish
    4 oz pimento-stuffed olives
    2 cans (14 oz each) diced tomatoes, drained
    8 oz feta cheese, crumbled
Preparation
    Preheat the oven to 400\u00b0F. Cook the rice in boiling salted water according to the package directions.
    Sprinkle the eggplant slices on both sides with salt and black pepper. Heat 3 tbsp of the oil in a large skillet on medium heat. Cook the eggplant for 3 mins on each side. Drain on paper towels.
    Add the remaining 1 tbsp oil to the skillet. Cook the ground beef for 7 mins. Add the onion, garlic, rosemary and olives and cook for 3 mins. Season with salt and black pepper. Add the tomatoes.
    Layer the rice, eggplant and ground beef mixture in baking dish. Sprinkle with the feta. Bake for 30 mins. Garnish with reserved rosemary.
