Bacon-Wrapped Meatloaf - cooking recipe

5 slices bacon
4 None eggs
1 None Spanish onion, finely grated
4 cloves garlic, minced
8.75 oz sausage meat
8.75 oz ground beef
2/3 cup fresh breadcrumbs
1/4 cup tomato sauce
1 None medium carrot, coarsely grated
None None mixed greens, to serve
Preparation

Preheat oven to 425\u00b0F. Grease a 7 x 3.5 inch loaf pan. Line base and sides with bacon, slightly overlapping and letting bacon hang over sides of pan.
Place 3 eggs in a saucepan and cover with water. Bring water to a boil over medium heat. Once the water reaches a boil, remove from heat. Let eggs sit in hot water for 12 mins, drain then run under cold water. Peel.
Meanwhile, combine onion, garlic, meat, breadcrumbs, tomato sauce, carrot and remaining egg. Press 1/2 into prepared pan. Make 3 indents in mixture and add hard-boiled eggs. Cover with remaining meat mixture. Fold bacon over filling, cover with foil and bake for 30 mins. Remove foil and drain excess fat. Bake for another 10 mins, or until cooked through. Drain fat. Let cool for 10 mins then slice.
Serve meatloaf with mixed greens.
