Icebox Cookies - cooking recipe

Ingredients
    1/4 cup brown sugar
    3/4 cup butter, chopped
    1 None egg, lightly beaten
    1 tsp vanilla extract
    3 1/3 cups self-rising flour, sifted
    3 oz dates, chopped
    3 oz pistachios, chopped
    3 oz candied ginger, chopped
    None None demerara sugar, to sprinkle (optional)
Preparation
    Heat sugar and butter over low heat until combined. Add egg and vanilla. Mix into flour to form a stiff dough. Knead in dates, pistachios and ginger.
    Divide dough into 3 portions then roll each into a 1 1/2 inch thick log. Wrap in parchment paper and chill until firm.
    Preheat oven to 350\u00b0F. Line 2 baking trays with parchment paper.
    Slice dough into 1/4 inch slices. Arrange on trays. Sprinkle with sugar, if desired. Bake for 10-15 mins, until golden. Let cool on trays for 5 mins then transfer to a wire rack to cool completely.
