Lamb Loin With Quinoa And Mint-Yogurt Sauce - cooking recipe

Ingredients
    250 g quinoa
    150 g plain greek yoghurt
    6 stalks mint, chopped
    600 g fillet of lamb
    3 tbsp olive oil
    1 None red pepper
    2 None spring onions
Preparation
    Cook quinoa according to package instructions. For mint-yogurt sauce, mix yogurt with mint and season.
    Preheat oven to 400\u00b0F. Heat 1 tbsp oil in an ovenproof frying pan, season lamb and sear for about 4 mins, until brown on all sides. Transfer to oven and roast for 10 mins, until pink on the inside.
    Meanwhile, heat remaining oil in another frying pan and saute pepper for about 5 mins. Add spring onions and saute for 4 mins and season. Mix with cooked quinoa.
    Remove meat from oven and allow to rest for 4-5 mins. Slice and serve with quinoa and mint-yogurt sauce.
