Ingredients

1/2 cup 2% milk
2 tsp active dry yeast
1 cup all purpose flour
1 medium egg, separated
3 oz smoked salmon, roughly chopped
3-4 sprigs dill, chopped + some for garnish
2/3 cup heavy cream
2-3 tsp salmon caviar
Preparation

Heat the milk until lukewarm then stir in the yeast to dissolve. In a large bowl, combine the flour, egg yolk, a pinch of salt, and the yeast milk mixture and mix to a smooth batter.
Beat the egg white until stiff then fold into the batter along with the salmon and dill. Cover and allow to rise for 1 hour.
Whip the cream until stiff then set aside. Heat a waffle iron and grease. Pour the batter into the iron and cook until golden brown. To serve, cut the waffles in half and garnish with a dollop of cream, salmon caviar, and dill.
