6 None eggs, separated
1 tsp vanilla extract
6 tbsp sugar
2 cups flour
2 1/4 cups low-fat milk
3 1/2 tbsp butter, melted
4 tsp vegetable oil
4 tbsp powdered sugar
None None jam, to serve
Preparation

For the batter, beat the egg yolks, vanilla extract, 2 tbsp sugar and a pinch of salt with an electric mixer until creamy. Beat in the flour in batches, alternating with the milk, until both are incorporated. Add the butter in a thin stream, stirring constantly. In a separate bowl, beat the egg whites until they form stiff peaks, then gently fold them into the egg yolk mixture.
Heat 1 tsp oil in a non-stick frying pan. Pour in 1/4 of the batter and cook over low heat until golden brown on the bottom. Flip and cook until the other side is browned. Using 2 wooden spoons, tear into bite-sized pieces. Sprinkle with 1 tbsp powdered sugar and caramelize briefly, turning. Remove from the pan and keep warm. Repeat with the remaining oil and batter. Serve with jam.
