Papaya Chicken Thai Salad - cooking recipe

Ingredients
    1/2 head iceberg lettuce, shredded
    1 None small papaya, peeled, seeded, sliced
    4 oz bean sprouts
    1/2 None cooked chicken, skin removed, flesh shredded
    4 None scallions, sliced, plus extra, to serve
    1 None small red onion, thinly sliced
    None None Dressing
    2 None lemons, juiced
    2 tbsp soy sauce
    1 tbsp sweet chili sauce
    2 tsp sesame oil
    None None Mint, chopped, to serve
Preparation
    In serving bowl, toss together lettuce, papaya, sprouts, chicken and scallions. Cover and chill until required.
    To make dressing, whisk all ingredients together in a bowl. Drizzle over salad just before serving. Garnish salad with chopped mint and scallions.
