Spaghetti With Mango And Shrimps - cooking recipe

Ingredients
    1/2 None cucumber, halved lengthwise, seeded and coarsely chopped
    1 None mango, peeled, stoned and cut into thin strips
    25 g fresh ginger, peeled and grated
    1 None onion, peeled and finely diced
    1 clove garlic, peeled and chopped finely
    150 g cherry tomatoes, halved
    1 bunch basil, chopped finely
    400 g spaghetti
    2 tbsp olive oil
    1/2 tsp curry powder
    3 tbsp tomato puree
    100 g shrimp
Preparation
    Cook the pasta in boiling salted water according to the package directions. Heat the oil and saute the onion, garlic and ginger. Add the curry powder and tomato puree, saute briefly and pour in 1 cup of water. Bring it to a boil and reduce the mixture a bit. Add the tomatoes, season to taste, bring back to a boil and simmer to reduce the sauce.
    Drain the pasta and mix it with the sauce. Stir in the cucumber and mango, add the shrimps and basil and serve immediately garnished with extra basil.
