Veggie Frittata - cooking recipe

Ingredients
    2 tbsp olive oil
    2 None zucchini, cut into thick sticks
    8 None large eggs, lightly beaten
    6 None green onions, sliced
    1/2 cup Parmesan, grated
    2 tbsp fresh basil, finely shredded, plus extra leaves for garnish
    1 cup cherry tomatoes, halved
    None None mixed salad, to serve
Preparation
    Preheat oven to 400\u00b0F.
    Heat oil in an ovenproof pan on medium. Cook zucchini for 3 mins, until just tender.
    Whisk together the eggs, green onions, Parmesan and basil. Season. Pour over zucchini and scatter tomatoes on top. Bake for 15-20 mins, until set. Scatter over extra basil and serve with salad.
