Bean And Corn Soup With Sausage Meatballs - cooking recipe

Ingredients
    100 ml canned sweetcorn
    40 g cherry tomatoes, halved
    1 None small onion, peeled and finely chopped
    1 clove garlic, peeled and finely chopped
    1 None small red chili pepper, seeded and cut into fine rings
    1 tsp oil
    300 ml vegetable stock
    30 g frozen green beans
    50 g coarse sausage, skinned
    1 tbsp lemon juice
Preparation
    Cook beans in boiling salted water for 7 mins. Drain.
    Meanwhile, heat oil in a frying pan. Saute onion, garlic and chili. Add stock and corn and simmer for 10 mins. Puree then pass through a fine mesh strainer. Add beans, tomatoes, lemon juice and season. In a separate pan, sear the meatballs until browned. Add to the soup and cook for 2-3 mins. Serve.
