Steamed Eggplant With Soy Dressing - cooking recipe

Ingredients
    1 None eggplant, peeled, cut into 1/2 inch slices and halved
    2 tbsp malt vinegar
    2 tbsp Chinese rice wine or dry sherry
    2 cloves garlic, chopped
    1 tbsp light soy sauce
    2 tsp sugar
    1/4 tsp sesame oil
    2 None scallions, finely sliced
    2 tbsp toasted sesame seeds, to serve
Preparation
    Place eggplant in a steamer basket lined with parchment paper. Cover and steam over simmering water for 10-15 mins, until soft. Remove from heat and cool for 5 mins.
    Meanwhile, combine remaining ingredients, except scallion and sesame seeds, in a saucepan over low heat. Simmer for 3-5 mins, until thickened. Pour over eggplant and serve sprinkled with scallion and sesame seeds.
