Apricot And Turkey Tagine - cooking recipe

Ingredients
    2 tbsp butter
    1 tbsp oil
    1 1/2 lbs turkey, cubed, bones discarded
    1/3 cup all-purpose flour
    1 None onion, chopped
    2 cloves garlic, crushed
    2 tsp finely grated fresh root ginger
    1 tsp ground cinnamon
    1 tsp ground coriander
    1 pinch saffron
    1 cup chicken stock
    2 None tomatoes, chopped
    3 oz dried apricots (about 3/4 cup)
    1 tbsp honey
    None None Couscous, to serve
    None None Plain yogurt, to serve
    None None Chopped pistachios, to serve
    None None Cilantro leaves, to serve
Preparation
    Heat butter and half the oil in a large saucepan on high. Toss turkey in flour, shaking off excess. Brown turkey in 2 batches, for 2-3 mins each. Season with salt and black pepper. Set aside.
    Heat remaining oil in same pan on high. Saute onion, garlic and ginger for 3-4 mins until tender. Add spices and cook for 1 min.
    Return turkey to pan. Blend in stock, tomatoes, apricots and honey. Bring to a boil. Reduce heat and simmer, covered, for 20 mins. Remove lid and simmer for 10-15 mins until thickened slightly.
    Serve tagine on a bed of couscous. Drizzle with yogurt and sprinkle with pistachios and coriander.
