Cauliflower Dhal - cooking recipe

Ingredients
    1 tbsp vegetable oil
    1 None Spanish onion, finely chopped
    1/2 cup fresh ginger, peeled, grated
    2 cloves garlic, minced
    1 (2 1/4 lb) cauliflower, cut into florets
    1/2 tbsp ground cumin
    1/2 tbsp ground coriander
    10.5 oz red lentils
    4 cups vegetable stock
    1 (13.5 oz) can diced tomatoes
    1/4 cup fresh cilantro leaves
    2/3 cup mango chutney
    1 cup yogurt
    None None naan bread, to serve (optional)
Preparation
    Heat oil in a large saucepan over medium heat. Cook onion, ginger and garlic until onion softens. Add cauliflower and spices. Cook, stirring, until fragrant.
    Add lentils, stock and tomatoes. Bring to a boil then reduce heat and simmer, stirring occasionally, for 20 mins, or until lentils are tender.
    Sprinkle with cilantro. Serve with chutney, yogurt and naan, if desired.
