Warm Potato And Watercress Salad - cooking recipe

Ingredients
    1 1/2 lb new potatoes
    4 tbsp olive oil
    2 tbsp cider vinegar
    1 None red onion, finely diced
    2 cloves garlic, finely chopped
    4 tbsp fresh parsley, finely chopped
    2 tbsp capers
    2.5 oz watercress
Preparation
    Cook potatoes in salted, boiling water for 15-20 mins. Drain and roughly chop. Whisk oil and vinegar then add onion, garlic, parsley and capers and season. Toss with potatoes and set aside to cool for 10-15 mins. Fold in watercress and serve.
